When you change the name of the only User account via User Accounts in the Control Panel it changes back to User ?
Are there any Scheduled Tasks set up to run under User ?
In Control Panel open Scheduled Tasks to see if that's the case.

It’s not hard to change, but it is annoying to have to change it when there is no "user" account. In this environment "user" will work though.
