Define "hidden". I believe that third party software exists that allows you to encrypt folders so that they can only be opened with the right password, but the administrators will be able to see that the folder is there. They will also be able to steal the password to the folder when you next type it in, if they have a mind to.

Basically, no, you can't defend yourself against a malicious administrator.
