The same Desktop Authority's (http://www.scriptlogic.com/da) inactivity
feature. It automatically shuts down machines you've defined when
inactivity is detected. You also can assign the task to setup some
programs when shutdown even will happen on client computer. Thus you
can create a list which software you want to install for your students
and it will be automatically installed on their machines when they'll
leave the class-room. You can mix individual and global setups. For
example you can assign all students to have Microsoft Office set up on
their machines. Those that are studuing physics can be assigned with
Mathematica or FEMLAB. Moreover, you can add per-user settings and push
some tracking software to course leader's machine alone.

It's better to use Group Policy for such tasks. Then you can put script
to be executed at shutdown. And still you will have the problem with
checking for inactivity to shutdown machines when student will leave
their desktops automatically. The last task can be performed with
desktop management tool. We use Scriptlogic's Desktop Authority
(http://www.scriptlogic.com/da). It has above mentioned inactivity
checking functionality that allows to set a schedule and shutdown
computers by end of the day when users leave their desktops. That's
what we usually do Friday evenings.
