Novice encyption questions

I tried encrypting a folder and its contents and noticed it changes all the
file dates. That's a problem in itself.
So I tried encrypting just the folder thinking that would block others from
getting to the files inside. But when I logon as someone else the folder is
in a different color but I can open the files inside just fine.
If I get all this sorted out I'll use encryption but want some way to
recover if the system crashes and I need to put this drive in another
computer and pull off files. I see there are such things as recovery keys. I
read numerous articles about them trying to get a handle on it. This is just
a lone computer, no domain, no policies or whatever. All the stuff about
recovery keys seem to apply to domain administrators and security consoles
and administrator plug-in tools and a whole lot of hoops to jump through
just to get a recovery key. Plenty of things to go wrong and then I can't
recover my data.. Is there some straight forward way to do this?
