Use "documents and settings" as a mount point

In order to get the maximum performance from my computer,
I don't want to use my entrire 40Gb disk as one
partition. Instead I would like to have three partitions -
one for the system, one for all user files (documents,
setting, etc.) and one for applications and games.
When it comes to the partition for applications and games
there is no problem. I simply create a new partition and
install everything on that partition instead of on
c:\Program files. The problem is the one for all
documents and settings. The perfect solution would be to
mount a partition on c:\documents and settings as all
documents (including the shared ones) would be stored on
a separate partition instead of the system partition. The
problem is then of course that a directory used as a
mount point must be empty and it is rather difficult to
make the documents and settings folder empty.
I would geatly appriciate it if anyone has any
suggestions on how to solve this!
