OK there were just a couple small things I had to do differently:
1. I changed the owner of a file to myself, but it turns out even when I hit
OK and got out of there, I had to completely exit and re-enter properties
for the properties window to recognize me as the new owner. Once I did
this, I could change the permissions.
2. I needed to uncheck the "inherit permissions from parent" box or whatever
in order to remove a whole bunch of extra permissions that were on some of
these files. That was another reason why many of the options were greyed
out. Once I stopped inheriting those permissions, I could remove them.
