Workstation Lockdown - Security Policy & Antivirus

I attended a Technet Security seminar in Toronto last
week.

They mention one of the best ways to lockdown a
workstation is to use the "Local Security Policy" to
disable the installation of programs on certain
directories and the use of an antivirus program.

Does someone know a MS article showing how this is done
and on which directories this policy should be applied.
