What issues are you having?
Someone here can probably help you resolve it if you let us know.
If the option is not in Add/Remove programs, you can not uninstall
SP1.
However you can perform a Repair installation of Windows XP, SP1 will
then be gone:

Data should be safe, back-up important data first just in case.
