Remote Desktop Admin

I want to be able to view a remote users desktop exactly
the way he sees it. Preferrably outlook settings. When I
login using as an admin using remote desktop I cant view
this users exact settings as he sees them. I could use
WinVNC but I dont want the user to see what I'm doing. I
cannot login as that user because company policy
prohibits me from using his password. Is there a way
using remote desktop to login and gain access to all his
settings and be able to open his email client as him? or
is there another way. This user has limited rights and I
have admin rights
