You don't get roaming profiles without a Microsoft server. All you get
are shared folders on a network. Outlook Express doesn't work properly
with message store across a network.

If what you want is the ability to logon to any machine and see your
files, the best you can do AFAIK is to put your My Documents on a share
and access that from any machine where you have an account setup.
