First, thank you for the quick response.
So if I understand you correctly, if he has full access to the exchange
server, he also has full access to this type of information; is that correct?
All emails go through "our" exchange server. This is the very server he set
up from ground zero. Although we have one tech that deals with problems the
server may have, he is the one that oversees the entire opperation.

If you send an email to him bcc'd to someone, then as a general email
user he would not know of nor be able to find out about the bcc.
If however, the email went through your Exchange (or your, i.e. his,
other email services) then there could be an archive for review which
would include all headers.
