Applying a restore of a backup would work or using Robocopy with the correct
switches will do the trick.

Recently I used Robocopy to do this for some of our users home drives within
a clustered environment and it worked great. It may have been a little
slower than a tape restore, but I was able to automate the movement of user
shares from one drive to another and turn off the previous previous share.
Then all I had to do is check on it periodicly throughout the day.
