copy a large number of files / preserve the permissions

Is there a way to copy a large number of files from one system to another
and preserve the permissions for those files?

I am upgrading a server that stores user's home dir's and just public
folders etc.

I would like to move the data to the new server over night, but would most
like that all the permissions stay the same on the files in the folders on
that server.

Is this possible?
