First, this will take time. Change the DHCP policy to renew every hour or
so. Then, after the twice time period that it WAS renewing (default is 3
days I think) then set up the new DHCP server (don't active it yet). On the
weekend or during down time, tell everyone to turn off their machines when
they leave (client PCs normally renew their IP address when they boot up,
and if the DHCP server isn't available, they'll broadcast for a new IP
address). That night, activate the new server, and deactive the old one.
Make sure you copy all the reservations, exlusions, ect. That'll be the best
way to do it.
The key is to do this AFTER everyone's DHCP client has the new renewal
period so there aren't any problems if somebody doesn't power off their
machine.

Unless you want to just set up new ones and not worry about the databases,
you'll have to back up the databases then restore them. I can't think of the
steps involved, and you may be able to manually copy the .mdb file across,
but I don't recall exactly. This one is a question for the NT forums, maybe.

You are going to have to touch every machine, then. Either make the change
or simple remove it and let DHCP handle it (best practice). Unless you want
to bring down the old WINS and DNS servers, then set the IP address of the
new ones to the same, you'll have to do it this way. Either way is ugly.
