switching between sam and kerberos

I have two member servers that are using their local sam for authentication
instead of kerberos.
one is our pbx software server and it is on windows 2000
the other is our exchange 5.5 server and it is also on windows 2000
my question is, why would they be on their local sam in the first place, and
how do I switch them back to kerberos?
