New user - folders properities

As administrator I put a new user in system. It is only a user and he has
only 1 folder. If I make available only one folder (My dosuments) but all
disk is not availbe, then the new user can open his document, but can not
save them. How to do it to prevent another files (new user shouldn't see
even see them) and give him a possiblity to open and save his files ?
