Typical knee-jerk reaction. Universities exist to provide knowledge and
experience. This is a practical, real-world experience that should be
taught. Why punish the prof (who I _really_ hope has tenure) just because
the network administrator may or may not be failing to perform his/her
duties wrt a known threat? Usually threats are unknown until after the
fact.

I'd make a big stink if the university is churning out students who know
more than the network administrator.

You got that right - if the network admin knows of the risk and fails to
take adaquate steps to protect the data (which _really_ isn't that
difficult) then there is a clear case of gross negligence.
Force the admin to take the course and learn what the threat model is. Even
if the class isn't taught any more there will be students ranging from
curious to malicious who use the knowledge - which is readily available out
there no matter what classes are taught - to exploit the network.
