Almost All Admin Permisions

Hi All,

Wonder if anybody can help. Is it possible to add a user
to the administrators group but still cut down some
permissions?

Here's my problem;

I work for a fairly small company so there are only 2 of
us that do the IT here, we use Win2k on our PDC. Im off
to Oz for 3 weeks and whilst im gone i want to give the
the guy who helps me access to all areas of the system,
bar being able to gain access to certain company files
and folders. So as i basically said at the top of this
post, i want him to have full admin rights but without
the choice of taking ownership of files / folders or
adding himself to certain groups.

Is this possible?
