That's really hard to do, since every service may be needed by someone
at sometime. In general, removing apps you don't need and stopping
services you don't need will handle everything. But...
You may be looking at exercising too much manual control. Windows
systems aren't designed for you to control the services, they're
designed for the system to control them. There are issues with
defualt installs, but there are security configuration checklists that
you can use to turn off what you don't want open. Start at
