None which is easy; a lot of software writes a static name to the registry
instead of using the %WINDIR% and %SYSTEMROOT% variables.

You can try exporting the entire registry, and changing all instances of the
string "c:\winnt" to "c:\win2k" in bulk, then re-importing it. You will get a
lot of errors while doing that. You can then edit the "boot.ini" file to point
to "\win2k" instead of "\winnt". I would also initially leave a second copy of
the entire "winnt" folder just in case.

An alternative might be Partition Magic or Server Magic. I don't recall for
certain, but it may have the ability to do an automated rename of a system
folder like that. In any case, you may still have INI files lying around that
reference the "\winnt" location.

BTW, doing this in and of itself is not a very significant security measure, and
when you consider the amount of effort and the risk involved, is probably
counterproductive in terms of trying to ensure data safety.
