Matt,
Although I have not done this for my installation, the Books Online discuss
encrypting communication between the client and server. You can start here
and follow the links to read about it:

Let's say I'm just running a query or a report. The results are being
displayed on my desktop, so it seems that the information had to be
transmitted from the remote SQL server to my PC, right? If so, is that
data
transmitted in open text? Is it subject to hacking?

Do you mean run BACKUP\RESTORE commands? Or DTS?

When I am transferring data from my desktop to a remote SQL Server
instance
or vice versa, is the data encrypted? Is there any way someone could
get
the
data?
I'm new to SQL Server.
