Am I right in saying that EFS would protect the files from being copied from
one machine to another, but if someone installed Enterprise Manager on the
machine they would be able to view all database objects including data. I
have a particular issue because I am going to be distributing an application
using MSDE, but just wondered if there was any way I could protect the data
from being viewed by unwanting hands. (obviously they would need to know
what they were doing).

As far as I know there is no mechanism to set passwors for MDF, NDF and
LDF files. As Arnie suggested take a look into EFS.
