I'd sugget you to keep all object's script into VSS (Source Safe) where you
can back to the previous version
If we are talking about the data (not a structure's change) ,so you need to
handle it by using triggers and insert the data into Audit Tables

can I use the profiler to see changes that have already been made or do I
need to set it up for that beforehand?

Is it SQL Server 2000?
If it is, SQL Server does not track such info , you will have to use SQL
Server Profiler to see what is going on

there have been some changes made to a DB of ours and I'm trying to find
out which user is responsible. I didn't have C2 auditing active (I do
now ;) ). Is there a way to extract this information from the database?
