Change from LocalSystem to Account

Our SQL server was installed by someone else and they decided to install it
to use the system account. I'd like to make it use a user account with less
priviledges than system. Is there a walkthrough on how to go from system to
a user account and all the rights that the user acount must have to actually
still work properly? This is on our production server so down time must be
kept to a minimum.
