David,
Go into the IE settings (Internet Options/Content-Certificates). From there
you can import your cert from Thawte or any other provider; then it will be
availabe for configuration in Outlook 2007. <sarcasm>Big thanks to MS for
the straight forward answer on that one.</sarcasm>

I got a Thawte email certificate and can use it to sign and encrypt
email.
