The most simple thing I have found is to go through a use case
analysis with the users and then predefine directories for the main
categories of sharing. This avoids the users needing to understand
the NTFS permissions and their naviagating the User object picker.
Other than that, you might consider a script or some simple bat
files that are parameterized so that they provide account and
file / dir and it fires off a cacls for them.
