William;
Once Windows was installed on that computer, from Microsoft's point of
view IAW their EULA you agreed, the two became one.
You legitimately installed Windows on the computers.
The computers were effectively stolen.
You reported this to the police.
You reported this to your insurance company? If not why not?
The value of the computer includes the operating system.
You get a settlement from your insurance company based on your policy.
The computer and Windows are now the problem for the insurance company
and not you.
Microsoft has no way to track Windows even if connected to the
internet, there would be major privacy issues if this was possible.
For the same reason, they can not even tell if it is online at all..
All that is possible is limit to a point the updates which can be
installed.
Whether Microsoft disables that Product Key or not is between the
insurance company, Microsoft and possibly law enforcement, you are out
of the loop since insurance has covered your loss.
