Hello Veritas_Ben,
I am not sure why you want to rename a DC, since once built, there are many
things relies on its name. If you rename DC, all existing components
(related with the dc) will be corrupted. As you see, you get an error due
to incorrect authorisation/credentials when renaming it back. That is
because your certificate failed to pass the validation against the old
domain.

BTW: it would be best to post this question in the following newsgroup:
microsoft.public.windows.server.active_directory
All AD configuration issues and other questions are posted in the newsgroup
above.
The reason why we recommend posting appropriately is you will get the most
qualified pool of respondents, and other partners who the newsgroups
regularly can either share their knowledge or learn from your interaction
with us. Also, this is to make sure that the responders can better track
the problem. Unfortunately the
microsoft.public.windows.server.active_directory is not part of the managed
newsgroup list that we guarantee a 2 business day response, so the response
from the community could take a little bit longer. For a list MSDN Managed
newsgroups please visit the following link;
