Hello,
By default, the identity for any new application pool is the Network
service account but for the MS Sharepoint AppPool it is the Local System
account (and it is recommeded that you do not modify this).

And for other configurations for any application pool(incl. Default and
MSSharepoint), you can create a new application pool and check the settings.
