Need more information. What email server is being used, and is it managed
by your company, or by an internet service provider?
If your outlook downloads your email from your internet service provider,
the mail is probably still waiting there for you to download it.
If you manage your own email server and it was down this weekend, email sent
to it was queued on the sender's email server and either is now waiting for
you or some of it may have been sent back as an error message to the sender.
The time length for this to happen varies from server to server and is not
under your control... usually it's between 1 and 3 days before it gives up
and notifies the sender that the mail could not be delivered. In either
case, no action is necessary on your part. The sender should have been
notified that the message should be resent.
