If the dd can copy partial blocks (it should), you can use any block size.
Block sizes around 32 or 64 KB tend to give best performance, but there
are devices that will perform better at different block sizes. Most
noticably, some tapes will require 10 KB blocks.

BTW: On linux, you may need to set the device block size using blockdev
in order to read complete partitions.
