Sendmail is not a security risk. It used to be - but its the grand-daddy of
internet mail and still provides >50% of the email capacity on the
internet. It can be tricky to configure and is probably overkill for a home
machine.
Not had any experience with Exim - I did do some black-box testing on Email
server reliability a couple of years ago - Exim and qmail only just pipped
Microsoft Exchange at the 'crap' end of the spectrum. At the other end were
Sendmail and Groupwise. I couldn't get an accurate picture on Postfix -
either it was just to secure to identify remotely or there aren't that many
people out there using it - whatever, I have now inherited a postfix system
and it it seems to work reliably and is relatively easy to cofigure to do
simple stuff. I'd therefore recommend it.
