I don't know a lot about UnixWare 7 but a few things are key:
1) Patch management - if the vendor offers it, automate the process of
looking for patches and test and implement all security patches ASAP - on
SuSE Linux you can comfortably do this for free with YOU (yast online
update).
2) Antivirus - take a look at the open antivirus project and see whether you
can make the engines work on UnixWare.
3) Intrusion detection - monitor your log-files and any suspiscous
activitiy.
Protection against unkown exploits is difficult since those exploits are not
known ... :-)
