How do you know if a tunnel is really working?

Someone said do this:

ssh -v ...

What is that suppose to mean? How do I know if my tunnel is working?
What are some of the key words if any to identify if the port
forwarding is really working, when I do -v? What software can I use to
sniff or look at the packets? Perhaps I can see if the information is
not clear text or is clear text when the port forwarding is not
working.

Any suggestions.

thx
