No, it doesn't, and the preview pane has no effect on read receipts
either. When you change the status of the message from unread, a
response is generated. When you go from unread to read (whether you
read, reply or forward), a Read receipt is generated. When you go
from unread to deleted, a Not Read receipt is generated.
I'm not big on Outlook, but I have to use it at $ORK. What I do is
create a separate Personal Folders file, which exists as a file on my
workstation. Then I move spam into that folder. When it gets full
enough, I close Outlook and use Windows to delete the .pst file.
This does mean I have to create a new junk folder each time, but it's
not generating any receipts this way.

It seems less likely that a virus can establish itself when you are
using a non-admin account, but I doubt it's impossible.
