Want to do something on privacy protection

I am doing a project that protect user's personal data privacy on
Internet. Now I know when a user surf a website, his/her
IP,hostname,OS,browser type, etc, can be obtained by that website.
Java/JavaScript also can do ugly things to a Internet surfer. I'd like
to do something protect them, but first of all, I need to know how
they work in detail. Could anybody tell me how I can obtain knowledge
of the ways the website collecting users' information in great detail?
I am eager to learn something and do something.
