SSH is a product, VPN is a general term. The only thing they have in
common is encryption.
SSH is meant for a single user-interactive session (though it can be
configured to work without user-interaction) and comes with a set of
dedicated tools.
ipsec is the (Linux-)technology behind the general term VPN. One implementation
of ipsec is FreeS/wan.
A VPN encrypts all of the communication between two points, independent
of the tools you're using (telnet, FTP, rsh, ...). That's where it's name
comes from, _V_irtual _P_rivate _N_etwork.
Correct me someone if something is not correct. I just tried to explain the
general difference, am not so familiar with the details.
