You should be able to get this working. Did you add SMTP as a service on
the Access / Services page? (Presumably so). You should only need
one-to-one NAT if you have more than one SMTP server - use Access / Services
and just enter the private IP address of the SMTP server there (the firewall
public address would be the SMTP public address). Then, you'll still need
the rule to allow SMTP traffic to the SMTP server from the WAN.

FYI, your firewall is a re-branded SonicWALL, so you might try searching
their FAQ too.
