I'd say install Outpost http://www.agnitum.com/ and monitor
everything. Then when you've decided what sort of stuff that needs
closer inspection, enter the log filter and start specifying stuff
like outgoing ports. Outpost records most everything up to the actual
traffic so if you are interested in traffic you will need a sniffer.
