Easy Linux Install & Security Updates?

Which Linux distribution offers an easy installation and easy security
updates. For instance, my concerns are -
1. MEPIS has a great install, but as I understand it, it's based on the
testing branch of Debian. Thus you can't just use apt to grab the Debian
security upates - since the latter are based on Woddy, the last released
version.
2. Debian installation sounds nigh on to impossible for a newbie..
