I'm not sure about python, that much depends on your distro and what other
applications you use, eg RedHat distros uses python quite a lot for small
applications. You can see how your stuff works just by renaming the python
binary (usually in /usr/bin), this way you won't get deep into problems it
turns out that you need python.

/usr/share/doc is safe to remove, it contains only README files and other
documentation how to configure the applications/progranms in question. If you
don't need documentation at all, then you can remove all man directories too.
A better idea could be to take a look at someof the livecd distros like
knoppix, then you don't have to put down so much work, just popin the CD into
the CDrom and do what you need to do.
