Check out FreeBSD (just one of the possible suggestions). Junk
sendmail for something like qmail, setting up pop3d and imapd is also
trivial. Using squid for a proxy is one of the classical approaches.
As for security, if you do your firewalling with ipfw and watch out
for security announcements, you're good to go. I always go for
"whatever ports the world should not see should be closed, and open
only to the subnet that really needs them".
