For sendmail get the following RPMS
  -m4
  -sendmail-cf

Now edit the /etc/mail/sendmail.mc file and add any number of RBL
lists that you want (dont add pay sites unless you subscribe though).

Rebuild and you will notice a good drop in junk just by doing that.
The downside is your making the choice to block traffic at your mta
based on these lists your users never get the chance to choose to
decide if its spam or not. Of course if its your system its your
choice (i love rbls) and the users can love it or leave it.

Next RedHat (8 and 9 I believe) have bundled SpamAssasin. If your
running an older version go to the spamassassin website and grab the
rpm or build it from source.

Theres also a ton of other procmail based spam systems you can find by
googling or going to procmails site and i think theres some links to
point ya.
