Depends how paranoid you are.
* Simply delete the files to protect yourself
from Joe Normal.
* Overwrite the files/disk to protect yourself
from someone with software knowledge.
* Shred and burn the disk to protect yourself
from someone with hardware knowledge and time+money.
About the last point, harddisk heads are subject
to oscillations, so if you overwrite data, the
'track' on the disk is not exactly the same.
It is possible to read the disk in high resolution
and decode fragments of 'overwritten' data. This
normally involves disassembling the drive under
cleanroom conditions and some mechanical and
chemical processing.
BTW, there are companies out there doing this for
fees well within the reach of a small company.
