There are a few technical solutions to stop them sniffing;
If you are on a network that is not switched (everyone sees everyone?s traffic and good manners dictate you only read what is addressed to you) there are tools which will detect promiscuous mode (probably sniffing) network interface cards. Ettercap would be one.
If your network is switched they probably aren't permanently sniffing you but lookup ARP and DNS poisoning if this is a concern.
If they are network admins they could well be picking things up from infrastructure devices, web proxies, routers or whatnot, not much you can do here apart from tunnel or encrypt.
Finally if they have remote access to your PC it's not inconceivable your machine sniffs its self, check and if you can audit remote desktop connections and running processes.
