First of all, If you intend to sniff then you can make one of your
machine/ or add another machine to become Gateway for all the 6
machines, and impliment NAT + Proxy on it or you could use sniffing via
SPAN port if it's available on your switch.

Secondly, if browsing is disabled/ not allowed in your network, as in
they are allowed only to use local email server, then you could utilise
the local mailserver logs, But if they are free to browse and all, then
they can always send email via hotmail/yahoo or any free mail service,
Then in that case you have only two options: Either sniff them all
together or Put keyloggers in their computers with central logging
features.

I don't remember, but there are few keyloggers which email you once,
the log file is above *specific* size depending upon the network, however
you could search for it, or others on this list may help you in
this regard.

I don't know about the EU laws, whether sniffing / spying would be
legal/ethical or not and whether the evidence collected by these methods
are acceptable or not (perhaps they should be), anyway. =)
