I've been a participant in the SP3 beta program for a few months now and
have had it running on several machines both at work in a test environment
and in my home network.
Since version 3.140 (there were subsequent versions of 3.151 and 3.154.2,
respectively) I haven't had a single issue related to reliability/install
problems. If anything, this service pack is better than the ones before
because it seems that it does a much better and thorough job of checking
the operating system before actually installing it - the install process is
extremely slow in comparison to the previous service packs - but this is
definitely a "good thing".
I also did several uninstall/reinstalls using SP3 beta builds (since you
need to/should uninstall SP3 beta when moving to another beta or the
production release) - with no issues.
I highly recommend it and I would imagine that assuming you follow best
practices (i.e. perform a full backup before installing the patch, update
ERD, etc. etc.) you will have no issues - even if you do not test it
(although you definitely *should*...don't you have anything - a box at
home, your workstation...something???). Since the uninstall works well,
even if there are problems reported by users or experienced by yourself,
rolling back is very smooth (in my experience).

Today Windows 2000 Service Pack 3 was released at
http://download.microsoft.com/download/win2000platform/SP/SP3/NT5/EN-US/w2ksp3.exe
The only Win 2k server we have is mission critical and I cannot afford to
nuke
it with a new SP.
We do not have a "test box", where I know some people who work for larger
companies do have such a useful resource, so when you install this SP,
please let me know how it went (any issues, or does everything still run
smoothly).
I plan to patch the server next week if all goes well.
