I just asked this question in the Incidents list.
Here is what I got.
http://www.sans.org/resources/tcpip.pdf
And
TCP/IP Illustrated, Volume 1, by Richard Stevens
It looks like Volume 2 and 3 good too.

I'm not a professional in any sense of the word, I just toy with
technology out of love. I have yet to find a good tutorial or
instruction manual on how to use TCP/IP or many of the other
technologies used in security and the internet. While I'm sure they
exist, I simply haven't stumbled across them yet. It took me several
tries with Google to find an explanation of SMTP; even then it wasn't
obvious from the search results. Perhaps if somebody would make a
website or (inexpensive) book dedicated to topics such as these, more
geeks/professionals would have a knowledge of it.
And that concludes my outsider's view. :)
