Why shouldn't the EVERYONE be removed and replaced with Authenticated
Users?
I was thinking of doing this and can't really see any adverse impact.

It probably won't have any adverse impact, but do remember that in XP
and 2003 Everyone no longer allows anonymous access unless explicitly
permitted by Group Policy, so there is no effective difference.
