Please note: going from memory here...
On the Win2000 server CD, in a 3rdparty or extras folder there is a
wininstall or installshield LE package you can use to create MSI's.
These can then be deployed via Group Policy or scripts... It is not the
prettiest packager, but it's better than the one you aren't using...

Anyway I have managed to fix some part of the problem through the
customized
Office installation. In the section where you specify aditional
aplications
to be installed, I specify Sp2 and whatever I like, like Acrobat Reader
or
Winzip.
